Warm 1 cup coconut milk so it's warm to the touch. I used the microwave about 60 seconds. Add 1 tbsp brown sugar and yeast to the WARM coconut milk. Proof for 10 minutes.
While the yeast proofs. Add 2 tbsp coconut milk, 2 tbsp water, and 2 tbsp flour to a sauce pan. Heat to medium heat. Mix with a whisk until a fluffy mixture is formed. Reference photo above.
In a large mixing bowl add 2 cups flour, salt, the remaining sugar. Whisk together. Then add in the the yeast mixture. Use a mixer. Mix for 10 minutes. Add in the "fluff" from step 2. You may or may not need more flour.
Once you've mixed the dough for 10 minutes. Place it in a well greases bowl. Cover with a towel. Let Sit for 1 hr.
Preheat oven to 450F.
Once the dough has risen, punch the dough. Once ia fine. Divide dough into 6 lumps. Roll each lump into a roll. The roll should be about 1 inch thick.
Cut the ropes of dough into about 1 inch pieces.
Fill a pot with warm water. Add baking soda. Whisk together. You might need to heat this on the stove for a little bit.
Grease a baking sheet. Begin adding pretzels into the baking soda and water mix. Leave in the baking soda and water mixture for 30 ish seconds. Take out and place on the greased baking sheet.
Sprinkle pretzels with coarse salt. Place in the oven and bake for 7-10 minutes. The pretzels should come out golden brown.
Once you've removed the pretzels coat them with melted butter.
