Ingredients
  

  • 1/2 cup quinoa
  • 3-4 shredded carrots
  • 1/2 cabbage head
  • 3 celery stalk
  • 1/2 cup edamame
  • 1/4 cup cilantro
  • 1 extra firm tofu
  • 1/2 cup peanuts

Sauce

  • 1/2 cup peanut butter
  • 1 tbsp hot chili oil
  • 1 tsp soy sauce
  • 1/2 tbsp olive oil
  • 1 tbsp garlic or more
  • 1/2 tsp coriander
  • 1/4 tsp cumin

Instructions
 

  • Cook quinoa per package instructions. (I chilled my quinoa for a couple hours before I mixed everything in)
  • Pressed Tofu, Cube Tofu, Cooke tofu with olive oil with medium heat. Brown each side (roughly 15 Minutes)
  • Cut veggies
  • Combine sauce ingredients
  • Mix everything together
