Easy Spicy Peanut Quinoa Bowl (High Protein Meal Prep)
Ingredients
- 1/2 cup quinoa
- 3-4 shredded carrots
- 1/2 cabbage head
- 3 celery stalk
- 1/2 cup edamame
- 1/4 cup cilantro
- 1 extra firm tofu
- 1/2 cup peanuts
Sauce
- 1/2 cup peanut butter
- 1 tbsp hot chili oil
- 1 tsp soy sauce
- 1/2 tbsp olive oil
- 1 tbsp garlic or more
- 1/2 tsp coriander
- 1/4 tsp cumin
Instructions
- Cook quinoa per package instructions. (I chilled my quinoa for a couple hours before I mixed everything in)
- Pressed Tofu, Cube Tofu, Cooke tofu with olive oil with medium heat. Brown each side (roughly 15 Minutes)
- Cut veggies
- Combine sauce ingredients
- Mix everything together
