Fried Avocados – Easy Vegan Tacos

I know, I know, you aren’t here to read me ramble. You’re here because want to know how I made and how YOU can make your own FRIED AVOCADO VEGAN TACOS. Yes, it’s a thing and yes, they are tasty.

A little back story: I was at a Mexican restaurant a few months ago, and I ordered fried avocado tacos and man, they were…. utterly delicious! The restaurant is roughly 4 hours from where I live so to experience them again I decided to create them for myself! Because I’m balling on a budget (well sometimes I am) and have many other trips planned.

Let’s talk about diet restrictions. This recipe is vegan-friendly, vegetarian-friendly, and gluten-free (with the use of gluten-free wraps). I recently tried the Siete Grain Free Tortillas. I used the almond flour tortillas and the cassava flour tortillas. Both are great but, out of the two, the cassava flour was my favorite! I will be buying them again! Below, I have linked the products used in this recipe.

Now let’s talk budget: If you’re not following a gluten-free diet regular mission taco shells will do and you might already have some on hand. You could also fry with vegetable oil instead of avocado oil. Just don’t use olive oil for this recipe.

One last mention, I recently switched from vegetable oil to avocado oil for cooking and OH MY… It made a huge difference. So, I highly recommend investing in quality avocado oil. It’s a little pricey but I believe it’s well worth it. Also, for the cornmeal try to find a brand that isn’t super fine!

Easy fried avocado taco recipe. An easy way to pan-fry avocados. It’s a great addition to tacos, burgers, and wraps. The fried avocado recipe is vegan, doesn’t take long and uses simple ingredients. This recipe is vegan-friendly, vegetarian-friendly, and gluten-free (with the use of gluten-free wraps).

Ingredients

  • 1 avocado

  • 1 can black beans (seasoned)

  • 1 lime

  • Radishes

  • shredded lettuce

  • taco shells (I used seite almond flour)

  • 1/8 cup cornmeal

  • 1 tbsp chili powder

  • 1 tsp cumin

  • salt to taste

  • 1-2 tbsps of avocado oil

Directions

  • Heat avocado oil on medium – high heat on a frying pan. (5-7 minutes)
  • Add all spices and cornmeal to a bowl and mix. Cut avocado into slices.
  • Coat the avocado slices with the cornmeal mix.
  • Fry for minutes on each side. Or until golden brown on each side.
