Who is this Sandwich for?
This chickpea salad sandwich is for anyone who wants a summer classic but without the tuna! It’s great if you’re trying to save money or in the mood for a quick meal this will hit the spot either way.
Why did I make these?
Summer is right around the corner! SO exciting. In the summer I don’t like to cook too many elaborate meals, I’m sure you can relate? When I was a kid I ate A LOT of tuna salad sandwiches. I thought it was a good idea to recreate an old childhood favorite recipes but with chickpeas instead of tuna. I planning on making a bunch of meals that can be made in less than 20 minutes!

Chickpea Salad Sandwich
Ingredients
- 1 can chickpeas
- 1 small white onion chopped
- 1/4 cup sunflower seeds
- 1/8 cup pickles chopped
- 2 tsp black pepper
- 2 tsp dried dill weed
- 1/2 tsp salt
- 1/4 cup mayo
Instructions
- Strain the canned chickpeas. Place them into a bowl.
- Mash the chickpeas. Add the rest of the ingredients to a bowl. Mix well.
