Who is this Sandwich for?
This chickpea salad sandwich is for anyone who wants a summer classic but without the tuna! It’s great if you’re trying to save money or in the mood for a quick meal this will hit the spot either way.
Why did I make these?
Summer is right around the corner! SO exciting. In the summer I don’t like to cook too many elaborate meals, I’m sure you can relate? When I was a kid I ate A LOT of tuna salad sandwiches. I thought it was a good idea to recreate an old childhood favorite recipes but with chickpeas instead of tuna. I planning on making a bunch of meals that can be made in less than 20 minutes!
What to look forward to?
This recipe is plant-based and vegetarian. If you want to make it vegan use a vegan mayo! If you use gluten-free bread this recipe is gluten-free! In my “shop this recipe” segment down below I have listed a low carb sandwich thins that are worth checking out!
Look, this might be one of the cheapest meals I’ve made! So if you’re on a budget this recipe is for you!
