Hello blog family! Today we’re making chipotle inspired plant based tacos.
Are you in the mood for some delicious tacos? Because I sure am! If you have the time I HIGHLY recommend making your OWN tortillas. I don’t have a recipe yet but maybe soon! I’m working on an almond flour tortilla recipe! Your local farmer’s markets might sell some or you can look for some in the cooler section of your local grocery store.
I’ve been craving taco-inspired dinners for a while now so I went to work in the kitchen and came up with this recipe with the help of my cooking partner. And boy oh boy you will want seconds with these. SO what are you waiting for let’s get cooking?
As you scroll you might notice this recipe uses a lot of ingredients, most of these ingredients are fairly cheap so the cost of these tacos is still pretty low. You can get 6 serving out of these tacos which is great! I would label this recipe as budget-friendly.

Recipe tip:
I used homemade taco shells from the local farmers market. I’m not sure if I can go back to store-bought tortillas after having the ones from the farmers market! It’s worth trying to make your tortillas! You can use this recipe for homemade tortillas!

Rice INGREDIENTS:
Rice
½ cup white rice
1 cup 1 tbsp water
⅛ cup cilantro
½ lime
½ tsp salt
Butter
Plant based ‘meat’:
Tempeh
2 tbsp of juice in a chipotle adobo sauce
1-2 tbsp of water
½ lime
½ chili powder
¼ tsp garlic
¼ tsp cumin
Corn Salsa:
1 bag frozen corn
1 large jalapeno
1 small red onion
2 lime
¼ cup cilantro (optional, but worth it)

Ingredients For Cilantro Lime Rice
1/2 cup white rice
1 cup 1 tbsp water
1/8 cup cilantro
1/2 lime juiced
1/2 tsp salt
1/2 tbsp butter (vegan)
- INGREDIENTS FOR TEMPEH
Tempeh
2 tbsp of juice from chipotle in adobo sauce
1-2 tbsp of water
1/2 lime juiced
11/2 tsp chili powder
1/4 tsp garlic powder
1/4 tsp cumin powder
- Ingredients for corn salsa
1 bag frozen corn
1 large jalapeno
1 small red onion
2 limes juiced
1/4 cup cilantro chopped
Directions
- Combine all plant based ‘meat’ wet and dry ingredients into a container not the tempeh.
- Mix the ingredients well. Add in small pieces of tempeh into the mixture. Coat all piece of the tempeh with the marinade. Now you can let the marinade sit for 20 minutes or overnight. It’s up to you.
- Combine all rice ingredients into a pot. Bring to a boil. Cover and simmer for 15 minutes!
- On to the Corn Salsa, finely chop the red onion, and jalapeno. Combine the corn, jalapeno, onion into bowl. Squeeze the lime juice in and mix well.
- Fry up the marinated tempeh.
- Build your plant based chipotle inspired tacos!
