Vegan Oven Baked Zucchini Chips

I know it’s been a minute since I wrote up a recipe post, but I promise I have some exciting posts coming your way! But let’s get on to the recipe. I am a HUGE chip eater but boy those can catch up to you if you aren’t careful. So I’m bringing you a guilt-free chip recipe where eating all the chips doesn’t make you feel bad.

INGREDIENTS:

  • 1 large zucchini cut into thin slices
  • ⅓ cup bread crumbs or almonds
  • ¼ cup vegan parmesan cheese (i prefer this recipe)
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons of almond milk

RECIPE:

  1. Preheat the oven to 425 degrees
  2. Slice zucchini in thin slices.
  3. Mix all ingredients in a dry bowl and pour measured milk into a separate bowl.
  4. Dunk individual zucchini slices into milk then coat the slice with dry ingredients.

TIP: press the dry ingredients into the zucchini to make it stick. Place in oven and bake for 30-40 minutes.

6 ingredients. Vegan Oven-Baked Zucchini Chips. These yummy vegan snacks will blow your mind. Oven-Baked Zucchini Chips are a great alternative to regular chips or they can be used as a healthy side dish alternative.

Ingredients

  • 1 large zucchini cut into thin slices
