I know it’s been a minute since I wrote up a recipe post, but I promise I have some exciting posts coming your way! But let’s get on to the recipe. I am a HUGE chip eater but boy those can catch up to you if you aren’t careful. So I’m bringing you a guilt-free chip recipe where eating all the chips doesn’t make you feel bad.
INGREDIENTS:
- 1 large zucchini cut into thin slices
- ⅓ cup bread crumbs or almonds
- ¼ cup vegan parmesan cheese (i prefer this recipe)
- ¼ teaspoon black pepper
- ¼ teaspoon cayenne pepper
- 3 tablespoons of almond milk
RECIPE:
- Preheat the oven to 425 degrees
- Slice zucchini in thin slices.
- Mix all ingredients in a dry bowl and pour measured milk into a separate bowl.
- Dunk individual zucchini slices into milk then coat the slice with dry ingredients.
TIP: press the dry ingredients into the zucchini to make it stick. Place in oven and bake for 30-40 minutes.
